How to make Apple cider vinegar. I like using real whole cider. So many recipes for apple cider vinegar use sugar water and apple cores. I think a lot of these people tried to make cider and it didn’t work! Do you know why making apple cider vinegar doesn’t work for most people? The answer is sodium bisulfite. Here’s how to make it work! Making apple cider isn’t difficult, but there are a couple of things that will cause it to fail. To kill the sodium bisulfite and other acids in store bought juice, add 1,000 mg of calcium carbonate per gallon. (2 crushed TUMS tablets) I've been making wine and spirits 50 years. My Grandpa taught me when I was about 14 years old. He made and sold beer, wine and distilled spirits during prohibition and all through the Great Depression. Crush the Tums tablets (the dollar store brand is fine) and add them to the juice. Let it sit at least 4 hours before mixing in sugars, nutrients, or yeast. Don't worry about the flavor in the TUMS as you won't taste it. This also works for citric, folic and other acids added by bottlers or occurring naturally in citrus fruits or fruits with high acid content like kiwi or pomegranates. Leave the lid cracked and don't let it sit too long beyond the 4 hours or risk contamination. Afterwards, get it mixed and under a fermentation lock ASAP.

Im trying your recipe..can wait for the update.. if you read this.. I would like to know if the apple juice your using is fresh?..because apparently they let the apple cider sit for months before they sell it..thats what they said down at our local apple farm but I was thinking of using the fresh stuff..because I have it… ?

When I was living in Alaska I'd set my apple brew on the poach over night. At 30 below the ice freezes out and we called the left over amber liquid "Apple Jack" Talk about addictive! And numbing! Can't wait to see your results.
